Almond Chocolate Raspberry Detox Muffins

Ok these are amazing! They give me strength and energy instead of sucking all the life out of me after I have a few haha! These are flour-less AND sugar-less. Hello awesome. I love you. (To give due credit,
I found them first here.)

I tried these first without paper muffin cups, and let me tell you that was a mistake… (plus I left them in too long) and so they stuck to the side of my muffin tin, even with buttering the tin before hand. SO I definitely recommend the muffin cups ;)

2 cups almond flour (pulse almonds in chopper until ground into a gritty flour)
2 eggs
1/4 cup coconut oil
1/4 cup honey
1 Tablespoon vanilla extract
1 teaspoon apple cider vinegar
1/2 teaspoon baking soda
1 cup fresh raspberries
1/2-3/4 cup dark chocolate chips
12 muffin cups

Preheat oven to 350* and place your muffin cups in your tin.
Combine all the ingredients in your mixer until creamed, except for the raspberries and chocolate chips… then gently fold them in at the end.

Drop batter into muffin liners and bake for 15 minutes at 350*. The final muffins should be slightly brown on top, and a knife through the middle should show a little melted chocolate. If in question… I recommend taking them out sooner than later.

After baking my second round, I entered the ingredients into myfitnesspal (highly recommend) and here are the “specs” on the recipe that it gave…

Enjoy with ease that these won’t make you drop from a sugar crash 10 minutes after having one… or two ;)
